Ciro’s Spooky Witch Fingers Halloween Recipe

Spooky Witch Fingers
PREP TIME: 1 HR 15 MINS

COOKING TIME: 30 MINS

For the finger breadsticks 

250ml of warm water
15g of yeast
1 tbsp of barley malt
1 tbsp of Semolina flour
500g of grade 00 flour
3 tbsp of extra virgin olive oil
Salt to taste

For the fingertip sauce

400g of Cirio’s passata rustica
1 small onion, chopped
3 tbsp of extra virgin olive oil
50g of almonds, cut in half
Salt and pepper to taste

In a bowl, add 200ml of warm water, yeast and mat and stir until the yeast and malt have dissolved. Meanwhile in a separate bowl, place the remaining warm water and a pinch of salt, allowing the salt to dissolve as well.
Add the flour to the water, yeast and malt mixture and stir. When everything is well combined, drizzle the olive oil and add the water and salt mixture continuing to stir until well combined.
When the dough is stretchy and slightly sticky, transfer it onto a floured surface and knead for a few minutes. Transfer the dough back into the bowl, cover with cling-film and set aside to rise for approximately 1 hour.
Pre-heat the oven to 200C and start shaping the dough into finger breadsticks not forgetting to use a knife to re-create the lines of the knuckles. Follow by brushing with olive oil and sprinkling with semolina flour.
Place the finger breadsticks on a tray lined with baking paper and cook for 20 minutes.
Meanwhile, brown the chopped onion in a saucepan with 3tbsp of olive oil, add Cirio’s passata rustica, season with salt and pepper and allow to simmer for 10 minutes.
Once the fingers are cooked apply some tomato sauce to the tips and then apply half an almond on top to resemble a nail.
